Description

Puerto Rican Dishes by Berta Cabanillas and Carmen Ginorio is a classic cookbook devoted to the traditional cuisine of Puerto Rico. Originally published in 1956 as an English-language version of the Puerto Rican cookbook Cocine a gusto, it was created to make the island’s home cooking accessible to English-speaking residents and newcomers. The recipes draw on Puerto Rican culinary traditions and cover a broad range of ingredients and dishes, including fruits, vegetables, cereals and legumes, fried foods and beverages.

Alongside the recipes, the book includes practical information to help cooks work with traditional Caribbean ingredients, as well as cooking terms, measurements and a glossary. Its purpose was not simply to provide recipes, but to introduce readers to the ingredients and methods of Puerto Rican home cooking.
